But what about the Appetizers! (Loonyspoons’ Meatloaf Review)

Tonight I am all about “The Looneyspoons Collection” (cook book) by Janet and Greta Podleski!

I don’t know why, but up until this point I had always considered the art of appetizers to be a waste of time. I rarely entertain, so my attitude was, “What’s the point?” If you are anything like me, you skip over to the main course section with the one-pot dinners and go from there.

After reading just a few pages of the Podleski sisters’ cook book tonight, however, this all changed for me!

Can you say: Crispy potato skins with cheese and bacon?

How about: Rumaki (Bacon-wrapped, ginger-marinated chicken bites)?

And: Vegetable spring rolls with Thai dipping sauce?

Honestly, what was I thinking? I’m only 14 pages into the appy section and I have got some serious cravings already!  It was refreshing to find a list of ingredients that I would typically already have on hand, save one or two items, and I also liked the ladies’ efforts to keep the recipes healthy; boasting 150 Gluten-Free recipes!  In addition to offering amazing recipes (with pictures!!!), “The Looneyspoons Collection” promotes healthy lifestyle choices through comical cartoons, witty puns and brilliant nutritional trivia articles. There was never a dull moment as I flipped through the colourful and well-organized pages.

I have to confess, this all happened after I did my typical Lindsey move of skipping over to the main course meals earlier today… But it turned out to be a good thing, because now I can share my first review!

“All You Need is Loaf” (Easy weekday meat loaf with barbecue sauce).

I made this meal with baked potato and baby corn and it was delicious! My husband said he liked it, my littlest one scarfed it down, the only one who was picky was my 3 year old, but he pretty much has his heart set on spaghetti every night… In his defense, it was a little spicier than I expected, but my one year old didn’t seem to mind the added heat!  It was very easy to make, it took an hour to cook and maybe 5 minutes to throw together before putting it in the oven. Awesome!

Initially I was going to put recipes on here but seeing as they are from a published cookbook, I decided to refrain from copying it on here.  I know I also said that I would have a meal plan put together the next time I posted, but I have been procrastinating on that one. I’m preparing one tonight, no distractions! Grocery shopping will be done on Saturday, and then I will bravely post my plan and attempt to stick with it for this coming week. Sound good? Off to meal plan now! Have a good weekend!
