In case I tricked you into thinking this was a post about my hair, sorry to disappoint! My post is actually all about the meal I made for tonight’s dinner and it was SPI-CY!
My one-pot wonder pasta and chicken dish was found on a video circulating through Facebook with about 30 other ones to try out. I finally decided on:
3 chicken brest
1 red pepper, 1 green pepper, 1 yellow pepper
1 tsp salt
1 tbsp ea. of chili powder, cumin and garlic powder
5 cups of milk
4 cups of penne noodles
1 cup pepper jack cheese
With the exception of the pepper jack cheese (I used mozzarella), I followed this recipe to a T, and it turned out just the way it looked on the video although I had to account for some time to cook the pasta nearing the end.
It was so tasty, but wow, the kick was something else! I couldn’t believe my littlest guy, who polished off everything and then literally licked his plate clean. My almost-4 year old, however, barely touched the food on his plate, and really I couldn’t fault him for it this time. It left my mouth tingling with flavour and spices and had I known it would be this hot, I probably would not have considered it for a family meal. It was even hotter than the chili I make and I like to make that with a little extra “umph” too!
Another draw back from the meal is how much milk it requires. Thankfully, we were well stocked, because, well… we like our milk! Our baby is on homo milk now and the rest of us enjoy 1%, so I’m not sure if it really matters which type you use in the recipe, it didn’t specify so I just used 1%. I also have a ton of leftovers which should freeze nicely.
This recipe was very easy to follow, especially with the video and I’d give it a 5/5 for flavour and kick (if you like spicy!) but like I said, not something I would make for a family meal.
